:: Easy Cookie Baking with Kids::

Hi friends,

How was your week? Do you know that you can freeze unused cookie dough in the freezer? In our family, we bake cookies regularly but making the dough can be messy and take up some time. So, we like to make extra batches and freeze them in the freezer. The next time we feel like having some cookies, just pop them out from the freezer, defrost them and toss them in the oven. Easy!

This is the basic butter cookies recipe that I use :-
1 cup of butter
2 tbsp of sugar (reduced)
1 egg
2 2/3 cups of all-purpose flour
1 pinch of salt
2 tsp of vanilla extract

Then, bake in the pre-heated oven at 170 degrees for approximately 7 to 10 minutes.

*notes: You can add raisins, chocolate chips, nuts, cranberries to the basic batter for variations. You can freeze the dough as it is or like me, freeze them already moulded into shapes.

    One trick we do at home is to use an ice cream scooper. I freeze the balls of cookie dough. They take up less room and make the best shaped cookies! And, they don’t break in freezer. HTH.

    Ice box cookies, also known as shoebox cookies in my family (because my mom’s aunts would stack them in shoe boxes to give as gifts). Yum Yum Yum. Next time I see you I’ll give you recipes for ice box cookies that I make for Liu Jian’s family. You roll them in a log, stick them in a freezer and when you want to make cookies, slice them thinly. Super easy cookies!
